GFCF Orange and Poppyseed Muffins

Ingredients:


2 cups GF self raising flour

1 cup GF plain flour

1 cup vegetable oil

1/3 cup orange juice

1 cup GF soy milk

2 extra-large eggs

2 cups castor sugar

½ cup brown sugar

2/3 cup poppy seeds

1 teaspoon guar gum

1 tablespoon coconut essence

1 teaspoon orange essence

The peel of one medium orange finely chopped



Instructions:

Preheat oven to 200 degrees celcius.

Mix all ingredients together in a large mixing bowl until a smooth and even mixture.

Use large muffin trays

Line each muffin spot with a patty cake liner

Fill each muffin spot 2/3 of the way with mixture

Bake for 40 minutes until golden brown and skewer comes out cleanly

Serve with your favourite tea or coffee!
